This vibrant crockery is brimming with bold, agleam flavors, crunchy, cooling cucumbers and tons of caller herbs. It's a beauteous accompaniment to meaty dishes -- oregon a refreshing broadside during summertime heat.

Ingredients

For the dressing

  • One (1 1/2-inch) portion caller ginger, peeled and grated
  • 2 1/2 tablespoons extra-virgin olive oil
  • 2 tablespoons caller citrus juice
  • 1/4 spoon good salt

For the salad

  • 15 scallions, chopped into quarters lengthwise and finely chopped (2 1/4 cups)
  • 2 Persian cucumbers, chopped into 1/2-inch dice (1 cup; whitethorn substitute 1/2 seedless cucumber)
  • 1 greenish doorbell pepper, seeded and chopped into 1/2-inch dice (1 cup)
  • 3/4 cupful packed caller mint leaves, finely chopped
  • 3/4 cupful caller cilantro leaves, coarsely chopped
  • 1/2 spoon nigella seeds
  • Fine salt
