In Ferran Adria's caller cookbook, this is the archetypal people of a unit repast that includes glazed teriyaki pork belly and saccharine murphy with chromatic and cream.

Ingredients

  • 2 1/2 ounces frozen whole-leaf spinach, defrosted
  • 2 medium-size ripe tomatoes, chopped into ample chunks, with juices (may substitute astir 1/2 cupful herb puree, specified arsenic Pomi brand)
  • 2 tablespoons olive oil
  • 2 mean cloves garlic
  • 2 cups canned, no-salt-added garbanzo beans (chickpeas), drained
  • Generous pinch crushed cumin
  • 1 cupful homemade oregon no-salt-added chickenhearted broth
  • 2 ample eggs
  • Generous pinch kosher oregon good oversea salt, positive much for serving
  • Generous pinch freshly crushed achromatic pepper
  • 1 spoon cornstarch
  • Cold water
