This is simply a deconstructed mentation of the Middle Eastern tomato/bread salad, turning it into a platter afloat of elements cleanable for a serve-yourself attack astatine a meal party. You tin get arsenic artful oregon arsenic casual arsenic you’d similar with the presentation, letting guests take their favourite parts and make their cleanable bites.

Ingredients

Servings: 6-8 (makes 12 cups)

For the salad

  • 1/2 cupful extra-virgin olive oil
  • 1/4 cupful caller citrus juice
  • 3 cloves garlic, finely grated oregon pressed
  • 1/2 spoon good salt
  • 1/4 spoon freshly crushed achromatic pepper
  • 2 1/2 pounds caller tomatoes, preferably a premix of shapes, sizes and colors, cored if needed and chopped into rounds and/or wedges
  • 3 to 4 tiny cucumbers (12 ounces total), sliced
  • 1 reddish doorbell pepper, stemmed, cored and sliced
  • One (15-ounce) tin no-salt-added chickpeas, drained and rinsed (or 1 1/2 cups cooked chickpeas)
  • 1/2 mean reddish bulb (3 ounces), thinly sliced
  • 1 spoon crushed sumac (may substitute za’atar spice blend)
  • 1 tablespoonful chopped caller flat-leaf parsley
  • 1 tablespoonful chopped caller mint
  • Lemon wedges, for serving

For the crispy pita

  • 4 tiny pita pockets oregon 2 ample pita breads (6 ounces), chopped into triangles
  • 2 tablespoons extra-virgin olive oil
