The summation of 2 peculiar ingredients — textured purslane and tart sumac — makes this breadstuff crockery a fattoush alternatively than simply a Middle Eastern mentation of Italian panzanella.

  • 3/4 cupful coarsely chopped caller flat-leaf parsley
  • 1/4 cupful finely chopped caller mint leaves
  • 1 cupful (1 ounce) loosely packed arugula, washed, dried and torn into bite-size pieces
  • 1/4 cupful (1 ounce) purslane, coarsely chopped (optional; spot Where to buy)
  • 2 ail cloves, minced oregon finely grated
  • 1/3 cupful extra-virgin olive oil
  • 1/4 cupful caller citrus foodstuff (from 1 to 2 lemons)
  • 1 1/2 teaspoons crushed sumac (see Where to buy)
  • 1/2 spoon good salt, positive much arsenic needed
  • Freshly crushed achromatic pepper
  • 2 to 3 mean ripe tomatoes, peeled, seeded and chopped into 1/2-inch dice (at slightest 2 cups; spot Notes)
  • Two (6- to 8-inch) pitas, toasted successful a 400-degree oven for 15 minutes, past breached into 1/2-inch pieces
