This stir-fry of ovum noodles, mushrooms, ginger and just-wilted spinach features a condiment that packs a punch. Don't skip the sesame seeds — though they're featured arsenic a garnish, their crunch and spirit adhd further appeal.

Egg noodles travel successful tons of sizes; we recovered that pappardelle works good here.

Ingredients

Servings: 2-3

For the sauce

  • 6 scallions, trimmed and chopped
  • 1 tablespoonful unseasoned atom vinegar
  • 1 tablespoonful low-sodium soy sauce
  • 1 tablespoonful mirin
  • 1 tablespoonful toasted sesame oil
  • 1 tablespoonful well-stirred tahini oregon Chinese sesame paste

For the noodles

  • 6 ounces dried ovum noodles, specified arsenic pappardelle, oregon different agelong pasta (see headnote)
  • 1 tablespoonful peanut oil
  • 7 ounces caller shiitake mushrooms, cleaned, stemmed and caps thinly sliced
  • 1 1/2 ounces caller ginger, peeled and chopped into bladed matchsticks
  • 10 ounces babe spinach leaves
  • 2 tablespoons achromatic and achromatic sesame seeds, for garnish
