  • 4 1/2 cups peeled, cored and sliced (1/4 inch) Granny Smith, Stayman, Greening, Newton Pippin, York, oregon different tart, flavorful apples (4 oregon 5 mean apples)
  • 3 1/2 cups peeled, cored and sliced (1/4 inch) hardly ripe Bartlett, Anjou oregon Bosc pears (about 3 mean pears)
  • 2 tablespoons freshly squeezed citrus juice
  • 1/2 spoon finely grated citrus zest
  • 2 teaspoons peeled and finely minced ginger root
