These aureate fried pancakes of tofu, carrot and mushroom traditionally usage ovum arsenic a binder, but successful this recipe, an ovum replacer does the trick. For the dressing

  • 1/2 cupful soy sauce

  • 1 to 2 cloves garlic, minced oregon finely grated
  • 1 scallion, chopped
  • 2 tablespoons finely diced reddish onion
  • 1/2 shishito capsicum oregon jalapeño, sliced (optional)
  • 1/2 Fresno pepper, sliced (optional)
  • 1 tablespoonful brownish atom syrup oregon maple syrup
  • 1 1/2 teaspoons atom vinegar
  • 1 1/2 teaspoons mirin
  • 1/2 spoon freshly crushed achromatic pepper
  • 1/4 spoon crushed turmeric

For the dooboo jeon

  • One (16-ounce) artifact steadfast tofu, pressed (see Notes)
  • 3 caller shiitake mushrooms, stems discarded, caps diced (about 1/4 cup)
  • 2 scallions, chopped (about 1/4 cup)
  • 1 small-to-medium carrot, finely diced (about 1/4 cup)
  • 1/3 cupful positive 1 tablespoonful liquid ovum replacer, specified arsenic JUST Egg brand, divided, positive much arsenic needed (see Substitutions)
  • 1 tablespoonful murphy starch, positive much arsenic needed
  • 1/2 spoon good salt
  • 1/2 spoon freshly crushed achromatic pepper
  • 2 tablespoons rootlike lipid oregon different neutral oil, positive much arsenic needed
