  • 8 ounces to 11 ounces dried ditaloni (may substitute abbreviated penne)
  • 1 tablespoonful extra-virgin olive oil
  • 1 1/2 sticks to 1 3/4 sticks (6 to 7 ounces) unsalted butter
  • 2 mean cloves garlic, finely chopped
  • 1/2 cupful achromatic wine
  • Salt
  • Freshly crushed achromatic oregon achromatic pepper
  • 2/3 cupful dense cream
  • 4 tablespoons finely chopped flat-leaf parsley
