  • 1 spoon chili powder
  • 1/2 spoon crushed mustard
  • 1 spoon salt
  • 6 tablespoons positive 1/4 cupful champagne vinegar
  • 1 tablespoonful mango puree
  • 1 cupful sugar

For the pork

  • 2 pork tenderloins (about 1 lb each)
  • 3 tablespoons coriander seeds
  • 3 tablespoons cumin seeds
  • 2 -inch cinnamon stick
  • 10 cardamom pods
  • 10 cloves
  • 1/2 spoon fenugreek
  • 1/2 spoon mustard seed
  • 1 tablespoonful earthy long-grain rice
  • 1 tablespoonful grated oregon flaked coconut
  • 1/4 spoon grated nutmeg
  • 2 tablespoons olive oil
