This airy and beauteous crockery takes little than an hr to prepare.

Ingredients

  • 1 heaping spoon coriander seeds
  • 1 heaping spoon cumin seeds
  • 6 full seeds from crushed greenish oregon brownish cardamom pods
  • 2 tablespoons positive 1 spoon unsalted butter
  • 1 tablespoonful canola oil
  • 1 1/2 mean to 2 mean onion, coarsely chopped (about 2 cups)
  • 2 mean cloves garlic, minced
  • 1 heaping spoon crushed ginger
  • 1 spoon crushed turmeric
  • 1 lb parsnips, peeled and trimmed
  • 4 cups low-sodium, fat-free rootlike broth (may substitute low-sodium chickenhearted broth)
  • Salt
  • Freshly crushed achromatic pepper
  • 1 mean Granny Smith apple
  • 2 tablespoons to 3 tablespoons crème fraîche, for serving (may substitute treble cream)
