Democracy Dies successful Darkness

These cocktail party-friendly crostini wed affluent salmon, peppery arugula, creamy mascarpone and crisp fried shallots. A definite success, particularly erstwhile served with sparkling wine.

Ingredients

  • 18 slices baguette (each 1/4-inch thick; astir 1/2 baguette)
  • 2 tablespoons unsalted butter, melted
  • Few handfuls arugula, preferably babe arugula
  • 9 slices smoked salmon, each chopped successful fractional lengthwise
  • 1/4 cupful mascarpone cheese
  • Fried, Caramelized shallots
