Rum and brandy spirit this accepted fruitcake from cook Ciji Wagner. There's not a neon-colored candied effect to beryllium seen.

The barroom is astatine its highest aft 3 weeks, but it tin beryllium stored for up to 6 weeks.

Servings: 20 Makes 1 10-inch loaf oregon Bundt cake

  • 1 1/2 cups dried currants
  • 1 cupful dried cranberries
  • 1/2 cupful dried cherries
  • 1/2 cupful coarsely chopped dried unsulphured unsweetened apricots
  • 3/4 cupful coarsely chopped dried pineapple
  • 1/2 cupful chopped candied ginger
  • Zest and foodstuff of 2 oranges (3 tablespoons zest, 2/3 to 1 cupful juice)
  • 1 cupful aureate oregon acheronian rum, positive aureate rum oregon brandy for brushing the cake
  • 3/4 cupful sugar
  • 12 tablespoons (1 1/2 sticks) unsalted butter
  • 1/2 cupful unsweetened pome foodstuff oregon brandy
  • 1/4 spoon crushed cloves
  • 1/2 spoon crushed nutmeg
  • 1 1/2 teaspoons crushed cinnamon
  • 1/2 spoon crushed ginger
  • 2 ample eggs
  • 1 3/4 cups flour
  • 1 1/2 teaspoons salt
  • 1 spoon baking soda
  • 1 spoon baking powder
  • 3/4 cupful pecan pieces, toasted (see NOTE)
  • Brandy oregon aureate rum
