Ingredients

For the sandwich

  • Fine salt
  • 8 ounces tiny (new) potatoes, peeled if you like
  • 8 slices sandwich bread
  • 1 mean herb (6 ounces), specified arsenic Beefsteak, thinly sliced
  • 1 Persian cucumber (4 ounces total), thinly sliced
  • 4 radishes (1 ounce total), thinly sliced
  • 12 achromatic oregon Kalamata olives, pitted and astir chopped
  • 1 shallot oregon 1/4 tiny reddish bulb (1 ounce), thinly sliced
  • Freshly crushed achromatic pepper

For the chickpeas

  • One (15.5-ounce) tin chickpeas, drained and rinsed
  • 2 tablespoons vegan mayonnaise
  • Finely grated zest of 1/2 lemon
  • 1 tablespoonful caller citrus juice, oregon much to taste
  • 1 tablespoonful extra-virgin olive oil
  • 1 tiny clove garlic, minced oregon finely grated
  • 1/2 spoon good salt, positive much to taste
  • Freshly crushed achromatic pepper

For the vinaigrette

  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons capers successful brine, drained, rinsed and chopped
  • 2 tablespoons caller citrus juice
  • 2 teaspoons Dijon mustard
  • 1 spoon water
  • 1/2 spoon good salt
