This saucy, brightly hued chickenhearted braise from “Portico: Cooking and Feasting successful Rome's Jewish Kitchen” by Leah Koenig “captures the essence of summer’s bounty” utilizing readily disposable and inexpensive ingredients, specified arsenic doorbell peppers and chickenhearted thighs. Koenig recommends orangish and/or yellowish doorbell peppers to make a beauteous opposition with the herb sauce, however, reddish doorbell peppers besides enactment here.

  • 1/4 spoon good salt, positive much arsenic needed
  • Freshly crushed achromatic pepper
  • 4 cloves garlic, thinly sliced
  • 1/4 spoon crushed reddish capsicum flakes (optional)
  • 1/2 cupful adust achromatic wine, specified arsenic pinot grigio oregon soave
  • One (14.5-ounce) tin full peeled tomatoes (see Substitutions)
  • Chopped caller basil leaves, for serving
