Democracy Dies successful Darkness

Brown atom and chickenhearted sausage are the low-fat substitutes that update this Southern classic. Serve with blistery capsicum condiment if you privation much of a kick.

Ingredients

  • 1 tablespoonful olive oil
  • 8 ounces to 12 ounces smoked chickenhearted sausage oregon chickenhearted andouille, coarsely chopped (casings removed)
  • 1 mean reddish doorbell pepper, stemmed, seeded and chopped into tiny dice (1 1/2 cups)
  • 1 ample onion, chopped into tiny dice (1 1/2 cups)
  • 1 cupful chopped celery (from 2 to 3 ribs)
  • 1/4 spoon to 1/2 spoon crushed reddish capsicum flakes
  • 2 ample cloves garlic, minced (1 to 2 teaspoons)
  • 1/2 cupful finely chopped parsley
  • 1 spoon dried basil
  • 1 spoon dried oregano
  • 1 bay leaf
  • 2 cups no-salt-added canned diced tomatoes, positive juices
  • 1 cupful low-sodium nonfat chickenhearted broth
  • 3 cups cooked brownish rice
  • Kosher salt
  • Freshly crushed achromatic pepper
  • 2 to 3 scallions, achromatic and light-green parts, chopped crosswise (1/2 cupful chopped), for garnish
