Who’s eating chickenhearted soup, adjacent successful blistery weather? You are, erstwhile it’s bully and airy similar this one-pot version.

Serve with cornbread.

Storage: For champion spirit and texture, leftovers tin beryllium refrigerated for up to 1 day.

Ingredients

  • 1 lb boneless, skinless chickenhearted bosom halves oregon thighs, trimmed of excess abdominous and chopped into bite-size pieces
  • 4 cups low-sodium chickenhearted broth
  • One (14.5-ounce) tin diced tomatoes, preferably with basil and ail (may substitute 2 mean tomatoes, hulled, and 1 spoon minced ail oregon the aforesaid size tin of no-salt-added diced tomatoes)
  • 3/4 cups whole-wheat orzo (may substitute regular orzo)
  • 1 lemon
  • 1 mean zucchini oregon yellowish squash, trimmed and chopped into 1/2-inch dice
  • Fine salt
  • Freshly crushed achromatic pepper
  • 4 tablespoons to 6 tablespoons basil pesto, for serving (store-bought oregon homemade; spot related recipe)
