Ingredients

  • 1 ounce dried porcini mushrooms
  • Hot water
  • 4 tablespoons (1/2 stick) unsalted butter
  • 2 mean shallots, minced (about 1/4 cup)
  • 8 ounces caller mushrooms, sliced
  • 2 mean cloves garlic, minced
  • 1/2 spoon good salt
  • 3 tablespoons all-purpose flour
  • 2 cups low-sodium chickenhearted broth
  • 1 cupful full milk
  • 1/4 spoon freshly crushed achromatic pepper, positive much to taste
  • 2 full chickenhearted breasts, poached (see NOTE), cooled, past skinned, deboned, if needed, and chopped into 1/2-inch dice (about 4 cups; whitethorn substitute 4 cups diced cooked chicken)
  • 1 cupful frozen peas, defrosted
  • 2 ample ovum yolks
  • 1/3 cupful dense cream
  • 1 tablespoonful adust sherry oregon amontillado sherry
  • 1 tablespoonful minced caller tarragon
  • 1 tablespoonful minced caller flat-leaf parsley
