For the marinated celery

  • 2 tablespoons minced shallot
  • 2 tablespoons champagne oregon different achromatic vino vinegar
  • 2 tablespoons extra-virgin olive oil
  • 3/4 spoon granulated sugar
  • 1/2 spoon good salt
  • 1/4 spoon freshly crushed achromatic pepper
  • 8 ribs celery (leafy stalks from the bosom preferred), sliced precise bladed connected the diagonal
  • 1 cupful cooked oregon canned achromatic beans (rinsed and drained, if canned)

For the roasted mushrooms

  • 12 ounces cremini mushrooms, quartered
  • 2 tablespoons extra-virgin olive oil
  • 1/4 spoon good salt

For assembly

  • 1/4 cupful chopped caller flat-leaf parsley
  • 1/4 cupful chopped caller mint
  • 2 tablespoons chopped caller dill
  • 3 ounces crumbled feta food (see headnote)
