This pork stir-fry makes bully usage of that remaining celery languishing successful your crisper. Beef, lamb oregon crumbled tempeh would each beryllium good substitutes for the pork. Serve with steamed achromatic rice.

Ingredients

For the sauce

  • 2 tablespoons water
  • 1 tablespoonful granulated sugar
  • 1 tablespoonful Chinkiang vinegar (Chinese achromatic vinegar)
  • 2 teaspoons soy sauce
  • 1 spoon cornstarch
  • 1 spoon toasted sesame oil

For the stir-fry

  • 1 tablespoonful canola oil
  • 4 dried reddish chiles, crumbled (seeds discarded if you similar little heat)
  • 1 spoon Sichuan peppercorns
  • 5 mean ribs celery, sliced connected the diagonal
  • 1 greenish doorbell pepper, seeded and chopped into bladed strips
  • 3 ample ail cloves, thinly sliced
  • One (2-inch) portion caller ginger, peeled and thinly sliced
  • 6 scallions, sliced, achromatic and greenish parts separated
  • 8 ounces crushed pork
  • 1/4 cupful roasted peanuts, coarsely chopped
  • Fine salt
  • Cooked rice, for serving
