These indulgent sandwiches get a bully tang from whole-grain mustard and a large deed of umami from the miso and the caramelized onions. Grilled food for dinner: Why not?

Storage: These sandwiches sensation champion erstwhile freshly made. Leftovers tin beryllium wrapped and refrigerated for up to 1 day. To reheat, lukewarm successful a 350-degree oven oregon toaster oven for 5 to 10 minutes.

Ingredients

  • 1 tablespoonful extra-virgin olive oil
  • 1 ample yellowish bulb (1 pound), thinly sliced
  • 1/8 teaspoons good salt
  • 1 tablespoonrice vinegar, preferably unseasoned
  • 3 tablespoons unsalted butter, astatine country somesthesia (may substitute vegan butter, specified arsenic Miyoko)
  • 2 teaspoons achromatic oregon acheronian miso paste
  • 1 tablespoonful whole-grain mustard
  • 4 slices good-quality sandwich bread
  • 4 ounces grated Gruyère food (1 cup; whitethorn substitute vegan shredded cheese, specified arsenic Violife oregon Daiya)
  • Cornichons (a.k.a. gherkins), for serving (optional)
