Cool and refreshing, this crockery is based connected bún, Vietnamese atom noodles, which, here, are topped with marinated tofu, tons of caller herbs, peanuts and nuoc cham, a saccharine and spicy sauce. You tin substitute strips of grilled oregon sauteed beef, pork oregon chickenhearted for the tofu. Look for the thinnest vermicelli-style atom noodles for the fastest preparation. If you lone person thicker atom noodles, they should beryllium cooked according to the bundle instructions.

Ingredients

Servings: 4 (makes astir 4 cups noodles with 3 cups tofu and vegetables)

  • One (8-ounce) bundle vermicelli atom noodles

For the tofu

  • 1 1/2 tablespoons food sauce
  • 1 spoon granulated sweetener oregon maple syrup
  • 1 spoon peanut lipid oregon rootlike oil
  • 1 spoon soy sauce, preferably low-sodium
  • 1/4 spoon five-spice pulverization (see related recipe)
  • 1/4 spoon freshly crushed achromatic pepper
  • 1/2 tiny yellowish bulb oregon shallot (2 to 3 ounces total), sliced
  • 3 cloves garlic, smashed
  • One (14-ounce) bundle steadfast tofu, pressed and chopped into cubes (see Notes)

For the nuoc cham

  • 2 tablespoons granulated sweetener oregon 3 tablespoons maple syrup, positive much arsenic needed
  • 3 tablespoons caller lime juice, positive much arsenic needed
  • 1/2 cupful lukewarm water, positive much arsenic needed
  • 3 tablespoons food sauce, positive much arsenic needed
  • 1 Thai oregon serrano chile pepper, thinly sliced oregon 2 teaspoons sambal oelek (optional)

For the toppings

  • 3 cups (about 3 ounces) babe lettuce leaves (such arsenic food oregon Boston), chopped into ribbons if large
  • 2/3 cupful unsalted roasted peanuts oregon cashews, coarsely chopped
  • 1/4 cupful fried onions oregon shallots (optional)
  • 1/2 cupful hand-torn caller cilantro leaves and tender sprigs
  • 1/2 cupful hand-torn mint leaves
  • 1 Persian cucumber, sliced thinly connected a bias
  • 1 tiny carrot, scrubbed and chopped into bladed matchsticks (optional)
