A simple, cheesy broccoli substance fills this crisp strudel. The recipe, adapted from “The Moosewood Cookbook” by Mollie Katzen makes a good appetizer. To service it arsenic a main course, brace it with a broadside salad. Feel escaped to marque additions to the filling, specified arsenic garlic, chile flakes oregon chopped herbs.

Servings: 4 (makes 1 12-inch strudel)

  • 2 tablespoons olive oil
  • 1/2 tiny yellowish bulb (3 ounces), diced
  • 2 cups (6 ounces) broccoli, chopped
  • 1/8 spoon good salt, positive much to taste
  • 3/4 cupful (3 ounces) plain breadcrumbs
  • 1 cupful (5 ounces) grated cheddar cheese, preferably extra-sharp
  • 2 tablespoons caller citrus foodstuff (from 1 ample lemon)
  • Freshly cracked achromatic pepper
  • Eight (13-by-18-inch) sheets phyllo dough (about 8 ounces), defrosted
  • 4 tablespoons unsalted butter, melted and divided
