This volition surely upgrade abrogation fare. A warning: Bluefish isn't regularly disposable successful Washington country food markets; it's champion to telephone ahead. The crockery goes nicely with couscous and carrot crockery and a California sauvignon blanc oregon a Loire Valley wine.

Ingredients

  • 4 tablespoons olive oil, positive much for pan
  • 4 mean cloves garlic, crushed
  • 2 serrano chile peppers, stemmed, seeded and coarsely chopped
  • 1 citrus (finely grated zest only)
  • 1 tablespoonful coriander seed
  • 1 tablespoonful crushed cumin
  • 1 pinch saffron threads
  • 2 tablespoons grated ginger root
  • 6 mint leaves
  • 2 pounds filleted bluefish, chopped into 1/4-inch-thick scaloppini (may substitute mahi-mahi)
  • 1 lb tomatoes, peeled, seeded and coarsely chopped
  • 1 cupful food stock
  • Salt
  • 1/4 cupful flour
  • 2 ample eggs, beaten
  • Freshly crushed achromatic pepper
