Ingredients

For the dressing

  • 3/4 cupful low-fat mayonnaise
  • 1/2 cupful buttermilk
  • 1/4 cupful coarsely chopped tarragon leaves
  • 1 tablespoonful coarsely chopped scallion
  • 1 tablespoonful coarsely chopped flat-leaf parsley
  • 2 teaspoons minced garlic
  • 2 teaspoons freshly squeezed citrus juice
  • 1 1/2 teaspoons ail powder
  • 1/2 spoon dried oregano
  • 1/4 spoon chili powder
  • Pinch salt

For the salad

  • 3 ample eggs
  • Fine oversea salt
  • 1 tablespoonful achromatic vino vinegar
  • 1 mean caput romaine lettuce, chopped into 1/8-inch-thick slices (about 4 cups total)
  • 2 bunches watercress, pugnacious stems discarded
  • 1/2 tiny caput iceberg lettuce, chopped into 1/8-inch-thick slices (about 2 cups)
  • 3 cups packed arugula, chopped into 1/8-inch-wide slices
  • 1/2 cupful coarsely chopped scallions, greenish parts only
  • 1/2 cupful coarsely chopped tarragon leaves
  • 1/2 cupful grated aged cheddar cheese
  • 3 tablespoons extra-virgin olive oil
  • Cooked nutrient of 3 1-pound lobsters
  • Freshly crushed achromatic pepper
  • 1 avocado, peeled, pitted and chopped into 1/8-inch-thick slices
  • 4 slices crisp cooked bacon, chopped into 1/2-inch pieces
  • Crisped fried shallots, for garnish (see NOTE)
