This hearty, spicy main-course crockery from cook Vishwesh Bhatt puts a distinctly Southern rotation connected Italian minestra. The footwear comes from the mustard greens and a generous dose of reddish capsicum flakes, but you tin substitute Swiss chard oregon kale for the erstwhile and chopped backmost connected the second if you’d like. Bhatt prefers the smallest field-pea assortment helium tin find, specified arsenic woman peas oregon crowder peas, but black-eyed peas are easier to find and enactment well. Serve with crusty bread.

Ingredients

  • 1 tablespoonful olive oil
  • 1 tiny yellowish oregon achromatic bulb (6 ounces), thinly sliced
  • 2 mean carrots (10 ounces total), scrubbed and diced
  • 2 celery stalks, diced
  • 5 cloves garlic, thinly sliced
  • 8 ounces dried tract peas, specified arsenic woman peas, crowder peas oregon black-eyed peas, soaked overnight, rinsed and drained
  • 6 cups Scrappy Vegetable Broth (see related recipe) oregon store-bought no-salt-added rootlike broth
  • 1 tiny clump mustard greens (4 ounces), stemmed and chopped
  • 1 tablespoonful balsamic vinegar, positive much to taste
  • 1 tablespoonful chopped caller rosemary
  • 1 spoon good oversea salt, positive much to taste
  • 1/2 spoon crushed reddish capsicum flakes, positive much to taste
