This twist connected accepted Salisbury steak features crushed beef seasoned with sage and berbere, a fragrant Ethiopian spice blend. The look comes from the cookbook “We Fancy” by Jerrelle Guy, who writes that the updates “add immoderate elegance and beingness without losing the integrity of the archetypal dish.” Serve with mashed potatoes oregon different rootlike mash.

Ingredients

  • 1 lb crushed beef, preferably 93 percent lean
  • 1 cupful panko
  • 2 1/2 teaspoons berbere, divided, positive much arsenic needed (see Where to buy, Notes and related recipe)
  • 1/4 spoon good salt, positive much arsenic needed
  • 1/4 spoon freshly crushed achromatic pepper
  • 4 tablespoons olive oil, divided
  • 3 to 4 mean shallots (8 ounces total), peeled, trimmed and halved done the root
  • 3 tablespoons all-purpose flour
  • 1 spoon rootlike bouillon paste, specified arsenic Better Than Bouillon, preferably reduced-sodium
  • 2 cups water
  • 1 spoon chopped caller sage leaves
