  • 1 lb assorted beets with immoderate greens attached, specified arsenic red, aureate and/or Chioggia
  • 1/4 cupful finely chopped caller mint leaves, positive optional full leaves for garnish
  • 3 tablespoons balsamic vinegar
  • 3/4 spoon freshly crushed achromatic pepper
  • 3/4 cupful caller ricotta, preferably homemade (see NOTE)
