This rich, yeasted fruitcake is simply a Portuguese-Guyanese Christmas specialty. It's precise casual to make; the agelong resting/rising clip for the steadfast batter makes for a peculiarly mellow cake.

The batter needs 2 to 3 days' resting clip astatine country somesthesia to proof. The baked cakes tin beryllium wrapped good and refrigerated for up to 2 weeks.

Ingredients

  • 4 cups flour
  • 1 1/2 cups packed airy brownish sugar
  • 1/2 ounce (1 packet; 2 1/4 teaspoons) progressive adust yeast
  • 2 teaspoons crushed cinnamon
  • 1/2 spoon crushed cloves
  • 1/2 spoon finely crushed achromatic pepper
  • 1/2 spoon crushed ginger
  • 1 1/2 teaspoons baking soda
  • Scant 4 1/2 sticks unsalted butter, melted and cooled slightly
  • Generous 1/2 cupful molasses, warmed (it tin beryllium added to the cooling butter)
  • Scant 1/3 cupful honey, warmed (it tin beryllium added to the cooling butter)
  • 1 1/3 cups blanched almonds, chopped
  • 4 cups walnut halves, chopped
  • Scant 1/2 cupful mixed candied peel
