  • 24 ounces 1 1/2-inch-thick swordfish fillet, chopped into 2-inch chunks (16 to 20 pieces), OR
  • 20 ounces tail-on, shelled and deveined shrimp (16 to 20 pieces)
  • 3/4 cupful Lemon Marinade (see related recipe)
  • 1 seedless cucumber (ends trimmed), peeled, past chopped crosswise into 1/2-inch slices (optional)

For lamb oregon beef kebabs (4 servings each)

  • 2 pounds boneless limb of lamb (trimmed of each abdominous and metallic skin), chopped into 1 1/2-inch cubes (16 to 20 pieces), OR
  • 1 1/2 pounds beef sirloin (fat removed), chopped into 1 1/2-inch cubes (16 to 20 pieces)
  • 1 seedless cucumber (ends trimmed), peeled, past chopped crosswise into 1/2-inch slices (optional)
  • 3/4 cupful Balsamic Marinade (see related recipe)

For rootlike kebabs (4 servings arsenic an entree, 8 arsenic a broadside dish)

  • 1 each mean red, yellowish and greenish doorbell peppers, stemmed, seeded and chopped into 1-inch-square pieces
  • 1 mean (1 pound) eggplant, chopped lengthwise into 8 slices, past chopped crosswise into 1-inch wedges
  • 1 mean reddish onion, chopped into 8 slices past separated into rings
  • 1 lb (3/4 pound) cremini mushrooms, stems trimmed
  • 2 mean (3/4 pound) yellowish squash (ends trimmed), chopped into 1/2-inch slices
  • 1 ample (1/2 pound) zucchini (ends trimmed), chopped into 1/2-inch slices
  • 3/4 cupful Balsamic Marinade (see related recipe)
  • 1 spoon dried oregano
  • 1 spoon dried basil
