For the herb confit

  • 6 Roma tomatoes, quartered and seeded
  • 1 tablespoonful olive oil
  • Salt

  • 3 sprigs thyme

  • 1 tablespoonful extra-virgin olive oil

For the crab cakes

  • 1 loaf (11.25 ounces) Texas toast, specified arsenic Safeway Texas Toast Bread
  • 1 cupful low-fat mayonnaise
  • 1 ample ovum yolk
  • 1 spoon Old Bay Seasoning
  • 1 lb jumbo lump crabmeat, picked escaped of shells and cartilage (be cautious to permission lumps of crab intact)
