A bounty of overripe, bargain-priced tomatoes astatine her section market store prompted Reston nonmigratory Andrea Okwesa to travel up with this recipe. The condiment is chunky and luscious, with tons of sauteed onion.

Ingredients

Servings: 2 quarts

  • 1/2 cupful extra-virgin olive oil
  • 2 ample reddish onions, chopped successful half, past chopped into 1/4-inch slices
  • 6 mean cloves garlic, minced
  • 5 pounds precise ripe, but not soft, unbruised tomatoes (vine-ripened and plum varieties oregon a combination), washed, cored and chopped into 1/2-inch to 1-inch chunks, with juices
  • Leaves from 10 stems basil, stacked, rolled tightly and chopped crosswise into bladed strips (chiffonade)
  • Leaves from 8 sprigs oregano, finely chopped
  • Leaves from 8 sprigs cilantro, finely chopped
  • Leaves from 8 sprigs marjoram, finely chopped
  • 1 spoon oversea salt
  • 1 spoon freshly crushed achromatic pepper
